Stir-fried Sambal Okra (Lady Finger)

Sambal Okra (Lady Finger) Recipe

Stir fry the okra can help to reduce the inherent slimliness of the vegetable.

Ingredients:

  • 1 tbsp cooking oil
  • 2 cloves garlic minced
  • 200 grams okra sliced thinly & diagonally
  • 2 tbsp sambal belacan
  • 1 tbsp water adjust accordingly

Directions:

  1. Heat oil in wok. Stir fry garlic until just start to turn light brown.
  2. Add cut okra and sambal belacan. Stir fry briskly at high heat until the okra is just cooked, about 2 minutes (longer if you slice them thickly), adding water halfway through cooking.

  1. Those okra slices are so beautiful, tender and the sambal must give them a bit of a kick.

  2. So good with steamed rice! I love both stir-fry and steamed versions but most times, I know the “lazy” in me will call for the steamed version.

  3. I love okra, but do not buy often because my husband does not care for it…I like the idea of adding sambal to this stir-fried…delicious looking dish Wiffy.
