Hawaiian (Pineapple and Ham) Baked Rice Recipe

Hawaiian Baked Rice Recipe

You may use your favourite Cream of Mushroom Soup, such as Campbell’s, straight from the can. There is no need to dilute the soup with water, or to cook it before use.

You may baked the rice in one big sharing party tray, or in individual serving casseroles.

Ingredients:

  • 1 1/2 cups uncooked rice
  • 15 grams butter
  • 5 garlic cloves peeled
  • water to cook rice (about 1 1/2 cups; adjust according to your rice cooker)
  • 1 1/2 cup canned or fresh pineapple chunks
  • 3 slices of ham cut to small squares
  • generous tablespoons canned “cream of mushroom” soup to taste
  • 150 grams shredded mozzarella cheese
  • 150 grams shredded cheddar cheese
  • salt & black pepper to taste

Directions:

  1. Wash and rinse rice until water runs clear. Drain the rice.
  2. In a heated wok or saucepan, melt butter. Add washed rice. Season with a bit of salt and black pepper, to taste. Stir fry briefly with a spatula.
  3. When the rice mixture is cooled, transfer to a rice cooker. Add garlic cloves. Add water to cook rice.
  4. When the rice is cooked, stir in most of the pineapples and sliced ham, saving the rest as toppings. Portion out the mixed rice into oven-safe baking dishes or disposable party aluminium trays until about half the depth of the dish.
  5. Spread a layer of cream of mushroom soup sauce over the rice and sprinkle a layer of shredded mozzarella and cheddar cheese over the sauce. Lastly, top the cheese with the remaining pineapples and ham.
  6. Baked the rice in a preheated oven at 200°C (392°F) for about 20-25 minutes, or until all the cheese has melted and is slightly browned.

    Thanks for the recipe I tried this just now and the top was great but the rice itself was quite tasteless.. wondered what went wrong.:( can advise? Thanks! Or is it meant to b like that?

    • the campbell soup and cheese is supposed to flavour the rice. Next time, can try seasoning the rice with salt, pepper, campbell soup first, before spreading on the baking tray and topping with cheese. You may prefer it this way as the campbell soup will be more evenly distributed.

  4. Umm, what if I want to cook for 1 person servings? Do you have any idea what will the recipe be? o.o

    • Cook enough rice for one person, you can eyeball the pineapple and ham to be added to the rice, and as for the cheese and mushroom sauce – one layer each.

    Sorry i don’t really understand part 2 & 3 after reading a few times.

    Can you explain to me ?

Do you mean add the washed uncooked rice after draining out from the water, add in salt & pepper. How much salt & pepper do i need to put if for serving of 2 ppl? )

    3. Wait for the rice mixture to cool, then transfer to a rice cooker. Add the garlic cloves. Add water to cook rice (I use slightly more than 1 1/2 cups of water – adjust the water amount according to your cooker).

    For part 3,
    Wait for the rice mixture to cool (does it mean we need to boil part 2? )

    If without adding olive oil or butter, will it be not as tasty ?

    • Hi there,
      2. Do not need to add water, you are stir-frying uncooked, washed (and drained) rice for fragrance only. Just add a pinch of salt and a pinch of pepper.
      3. Certain rice cookers (the older types) operate via heat sensor – hence it will think that the rice is already cooked since they have been fried in the wok prior to this. that’s the reason for waiting for the rice mixture to cool.
      Add a bit of butter, it will make the rice more aromatic.
      Sorry for the confusion, will reword the recipe to make it clearer when I have time.
