French Beans with Egg

This is a fast and really easy dish that my mum frequently cooked. How easy? I learned how to cook it over the phone from my mum, lol. It’s so easy that I wonder if people who cook will laugh at me when they see me posting this recipe? But hey, I am a noob cook, and us the humble noobs don’t take even the easiest dish for granted ;p

French Beans with Egg (served with rice)

Ingredients
(Serves 2)

Ingredients for Baby Fine Beans with Egg

200g baby fine beans (or french beans), top and tail removed, and then sliced to 1-2cm lengths
3 eggs, beaten, and mixed with 3/4 tbsp light soy sauce
1 tbsp chopped garlic
1 tbsp olive oil
coriander, for garnishing

Directions
Heat oil in wok and stir fry garlic till light brown. Add chopped beans and stir fry over moderate high heat for 5 minutes. Pour the egg mixture slowly and stir thoroughly till the eggs are well cooked and no longer wet. Served with rice.

My kids like it with long bean. I cook just like how you do it. Yummy! Oh, I use the same olive oil too! :)

Woooo…I like this. A family dish. But what are baby fine beans? I usually use long beans or french beans and cut them to small pieces.

I cook this dish often too, with long beans. Baby fine beans has more crunch thou.

tf:: the package was labelled baby fine beans… it’s similar looking to french beans and bow I wonder if they are the same, keke…

Hi Wiffy, this is one of your many receipes I tried. Yummy!
I innovated a little with smashed fried salted fish (I reduced amount of soya sauce), it turn out great as well. If you are salted fish lover, you might want to give a shot. Thanks again for all your wonderful, easy to understand receipes.
