Beni Shoga (紅生姜) are thinly slices of ginger, dyed red and pickled in umezu or plum vinegar (梅酢). It is served as garnishing in many Japanese one-dish meals dishes such as Japanese curry and gyudon. You can purchase them from Japanese supermarkets.
