Stir-fried Garlic Spinach with Anchovies

This is an easy spinach stir fry that is full of flavor! Perfect for busy nights, and very healthy too.
And I made it even easier by doing up an illustrated step by step guide to cooking it, check it out at the bottom :)
Ingredients
(Serves 2)- 200g spinach leaves (stems removed)
- 2 tbsp chopped garlic
- 3 stalks spring onions, cut to 2-inch lengths
- 1/4 cup of fried anchovies
- 1/2 carrot, peeled and sliced
- 2 tbsp olive/vegetable oilSeasonings
- 1 tsp light soy sauce
- 1 tsp sesame oil
- 1/2 tbsp Chinese cooking wineDirections
1. Heat oil in wok and stir fry garlic till light brown.
2. Add the thick (white) part of the spring onions, carrots and anchovies. Stir fry for 2 minutes.
3. Add spinach, the rest of the spring onions and seasonings. Stir fry briefly and off the flame once the leaves softened (do not overcook).
4. Garnish with fried shallots, more deep fried anchovies and serve with rice.

Nice plate of veggies. I like spinach, the hammies love them too, esp the stem. Maybe you can give them the discard stems. =X

Can you tell me the total dietary fibre in stir fried galic?
Oh! I cooked something very similar last night! Intended to sprinkle with my ikan bilis but I totally forgot about it!
