When I saw the in-season leeks on sale at my supermarket and I remembered that I still have a bag of potatoes in the fridge, I knew this is just perfect to make this simple potato and leek soup.

I love the fact that this soup does not require cream because the potatoes alone gave the soup a naturally creamy and chunky texture. I considered this as a healthy and filling western style soup. We served the soup as a meal with home made garlic bread toast.

You read my mind, Wiffy. I have the leeks (they seem to be everywhere these days!) and I was just thinking of making this soup. So, I guess I just have to come straight here for the recipe, eh? ;) Soup looks delish!
Leek soup is very good when we have flu, is that right? So this is indeed very healthy soup and very comforting one :)
I guess all vegetables boosts immunity … great to have this when having flu and on normal days too :-)

The reason I don’t buy leeks is because of the cleaning I have to do…:O
but it’s not too hard? just rinse with lots of water :D
