When I tried to make Pumpkin Rice again a while ago, something disastrous happen – I added too much water! So I thought why not convert the yucky rice to porridge! I just dump the half-cooked rice into a thermal cooker, add about 1-2 litres of water, and bravo, we had yummy pumpkin congee that day!

Watercress Soup with Chicken & Ginseng

This is a recipe for watercress soup cooked with chicken (versus the usual pork ribs). I added some pao shen 泡参 (short american ginseng) which makes this soup extra ‘cooling’ (since pao shen has cooling properties just like watercress) & herbal tasting.

This is a dish I like very much. And it isn’t very hard to whip up! Ate this at Tung Lok Tea House last month and to my horror, they didn’t garnish with tobiko, so I’d say un-bashfully that mine looks better (hee, just kidding, Tung Lok rocks, of course!).
