Hai Di Lao Mala Sauce
This is the “海底捞” (Hai Di Lao) brand of mala sauce (paste) I use for my “mala xiang guo” (spicy numbing stir-fry; 麻辣香锅) recipe. It tastes great and contains a good amount of Sichuan peppercorns which gives the satisfying numbing (“麻”) kick in the dish.
I bought this at Sheng Siong supermarket for S$5.05. Each packet contains 2 x 110 grams sachets of sauce. I use one sachet each time.
To cook, just fry up some garlic and dried chillis.
Then stir fry the sauce for about a minute or until aromatic.
Add the ingredients and stir-fry until cooked. Season to taste.
