This egg mayonnaise or egg salad sandwich is a really simple and classic recipe. If you are making them for breakfast, you can prepare the hard boiled eggs the night before so that you cut down on the preparation time in the morning.

I used to takeaway egg mayo sandwiches at a cafe near my place so I recreated this familiar taste at home based on my memory. To me, it’s such a nice treat to have this on the breakfast table :)

Oh my goodness those little flags are so cute! :XO: My mom makes a similar recipe, (called egg salad sandwich…..essentially the same thing) and also has a mixture of chopped hard-boiled egg, mixed with mayonaise, mustard, and chopped green olives.

Looks so nice for breakfast.
This is my all time favorite, yummy!!!! When I was in UK, I would go to the sandwich bar and order egg mayo with crispy bacon with wheat bread ; ) At home I only make egg mayo alone, your tomato and lettuce make the sandwich more healthy : )
