Baked Salmon with Pesto Foil Packet

This baked salmon with pesto foil packet is a fun and easy way to cook salmon besides the usual method of grilling or pan-frying. I saw this recipe from Jamie Oliver’s Ministry of Food cookbook (this is the title of the UK edition, in US the book is called Food Revolution), which is mainly why I started making my own pesto.

With some pesto in the fridge, you can whip up this gourmet-looking meal effortlessly. The food is wrapped in a foil parcel and after baking, I simply serve the parcel straight on a plate so that the cleaning up, just like the cooking, is totally fuss-free.

  2. Yea! Agreed totally! Pesto is one of the easiest things to make, seriously! I mean it’s also such versatile that it goes so well with so many dishes. Your idea with baked salmon is good one. I’ll cooking these two things together by wrapping in foil. Usually though I’d just cook the fish first then spoon pesto over to serve.
