Macaroni with Basil, Chilli & Garlic

Stir fry macaroni with basil, chilli and garlic

This is part two of my super lame feat of cooking macaroni for breakfast, lunch and dinner. Today I am showcasing the lunch menu (lol!) of stir fry macaroni with basil, chilli and garlic. Stay tuned for part 3 which is tomato sambal macaroni =x

The combination of basil, chilli and garlic are the base ingredients that create the main flavour of this easy one dish meal. You can use your imagination when it comes to the other ingredients – I used asparagus, frozen peas, mushrooms and crab sticks on that particular day.

Ingredients
(Serves 1)

50g macaroni
1/2 tbsp dried chopped basil (double the amount if using fresh)
1 tbsp chopped garlic
1 chilli padi, cut (adjust or omit according to liking)
1 tbsp oil
salt

3 asparagus stalks (trimmed lower ends by shaving off with a knife)
2 mushrooms, stems removed and sliced
2 tbsp frozen peas
2 crab sticks, cut

Directions
Cook macaroni according to package instructions (remember to add some olive oil and salt to the boiling water). Drain and set aside. Cook frozen peas according to package instructions and set aside.

In a wok, heat oil and saute garlic, basil and chilli till garlic is slightly browned. Stir fry mushrooms and asparagus for 3 minutes. Toss in the frozen peas and crab sticks and stir fry for half a minute. Add macaroni and stir very briefly till well mixed. Season with a bit of salt (start with 1/4 tsp) and try the taste (if too bland, add more salt). Stir evenly.

This is a great recipe to use up the leftover veggie in the fridge. Like how the bright colors liven up the dish. :-)

How do you get the silverware in your photos to look so natural? Forks/knives/spoons always looks so fake in my pictures.

I will call it a “Rainbow” macaroni! So colourful and kid-friendly (as mentioned by tigerfish except for the chilli padi). Will cook it for my son soon! ;p

Looks like your leftover macaroni can be mixed with salad greens and served cold for the next day.
Another easy macaroni dish: macaroni with cheese, but use a sweetened pancetta instead (fry the cut up pancetta pieces with cinnamon powder).
I have a thing for mixing sweet and salty.
