This is a simple, yet refreshing pasta salad punched with the goodness of mango. Fun to make and delicious. Great on its own, and as a soothing side-dish.
Enjoy the fruity sensation!
Ingredients
(Serves 1)
- Spiral Pasta (or macaronis), boiled according to package instructions
- 1 just-ripe mango, diced
- 1 small tomato, diced
- 1 small red onion, diced
- 1/2 small chilli padi, seeded & finely chopped
- grated zest & juice of 1 large lime
- chopped coriander (cilantro) leaves/parsley

Directions
In a bowl, just toss the ingredients together and mix well. That’s it! Yay!

Looks like the cheater way is quite common…coz I do it this way too!
Love this pasta salad – sounds so light and easy. And it’s got a citrus factor to it that makes me go weak.
