Beetroot Soup - Will you drink a soup that’s red in colour?

“How will you react if a restaurant serves you soup that’s red in colour?”, I was asked when my subject (who requested anonymity, but not hard to guess lol =x) saw this soup on the dinner table. The ‘bloody’ hue comes from the beetroot, a vegetable which has great detoxifying properties. Come to think of it, the question does make some sense. This soup tastes pleasant and is healthy, but I wonder if it can only be served at home? Actually, I didn’t think it look so bad to me while I was cooking it, but now that I’ve been told, maybe it does look kind of gross. I guess people with an innate macabre streak will react more strongly to this, ha ha … =P

Detoxifying beetroot soup

Ingredients
(Serves 3)

200g pork ribs
1/2 carrot, skin removed, cut to small chunks
1 tomato, cut to wedges
1 small beetroot, skin removed, cut to small chunks
3 stalks of celery, cut to small slices
1/2 big onion, cut to rings
1200ml water
salt to taste (optional)

Directions
Blanch pork ribs in boiling water for 5 minutes. Drain and set aside. Boil water in pot and add the blanched ribs together with the rest of the ingredients to boiling water. Lower fire and simmer for about 40 minutes. Add salt to taste if required.

  3. I like beetroot too! I shred them into my salads, it’s sweet and crunchy and most importantly, healthy!

  5. i have tried beetroot soup. its suppose to be for blood circulation as well as an antioxidant. i feel immediately energized after a bowl. now im gonna prepare this dish at least once a weeek.
