Another comfort food for rainy nights.
Lotus Root Soup
Ingredients
(Serves 3)
400g lotus root, scrubbed, peeled and sliced thinly
1/2 chicken, skin removed and blanched in hot water for a few minutes
4 pieces Huai Shan
1/2 carrot, sliced or cut to chunks
6 red dates
2 tsp wolfberries
1.5 liters water
Salt (optional)
