Lotus Root Soup

Lotus Root Soup

Ingredients
(Serves 3)
400g lotus root, scrubbed, peeled and sliced thinly
1/2 chicken, skin removed and blanched in hot water for a few minutes
4 pieces Huai Shan
1/2 carrot, sliced or cut to chunks
6 red dates
2 tsp wolfberries
1.5 liters water
Salt (optional)

Directions
Place ingredients in pot of water and bring to a boil. Thereafter, simmer the soup on low heat for at least 40 minutes. Season with salt if required. Serve with warm, fluffy white rice.

Your version has so much more goodies in there. I like lotus roots soup. Cooked mine with peanuts. =)

Always done mine with pork ribs. Interesting variation with chicken. I have to try it with red dates and wolfberries.
