Mini BLT Sandwiches on French Toast

Actually nothing really special, just that they are served on French toast instead of plain bread, and that they are… mini, ha ha… Well, I think somehow, food tastes better when they are bite sized ;p
The term BLT is more widely used in western countries than in Singapore. Boon and I had fond memories of the BLT we ate while we were in NYC earlier this year - the food were really expensive there and we were relieved to find a cheap (though run-down) eatery near our hotel. Thankfully, the food was yummy! Needless to say, we had breakfast takeaway from the eatery every morning during our stay, hee…

Ingredients
(Serves 2)

French Toast
4-5 slices white bread, cut into 4 pieces each
2 tbsp milk (or substitute with soy milk)
2 eggs, beaten
1 tbsp sugar
Others
4 pieces streaky bacon
4 small chicken cocktails
Lettuce leaves
1 tomato, sliced thinly
Olive oil
Directions
To make the French toast, mix the milk, eggs and sugar in a bowl. Dip the bread slices into the mixture till saturated.
Fry the bacon on heated, un-oiled pan. Set aside and cut bacon to small pieces when cooled. Using the oil from frying the bacon, fry the bread till both sides are lightly browned. Add more oil if required. Drain the cooked bread on kitchen towels. Fry the chicken cocktail and cut to small pieces when cooled. Lay the cooked ingredients on small dishes for a do-it-yourself mini BLT breakfast.
