Black Pepper Honey Chicken with Avocados and Tomatoes

Ingredients
(Serves 2)
Chicken breast fillets, 200g
1 1/2 tbsp honey
1/2 tsp light soy sauce
1 tbsp chopped rosemary
1 tbsp chopped basil
1 tbsp garlic
grated blackpepper corns
2 tbsp olive oil
Topping:
1 avocado, cut to small chunks
1 tomato, cut to small chunks
Directions
In a bowl, mix the honey and light soy sauce and marinate the meat in the bowl for about half an hour on each side. Lay the marinated meat on a plate and smear a small amount of rosemary, basil and garlic on each side. Sprinkle the grated blackpepper corns according to taste (I like mine really peppery so I put a lot more). Flip to the other side and do the same. Heat oil in pan and fry the fillets till cooked. Cut both the avocado and tomato to small chunks and mix in a small side dish. Top the chicken fillets with the avocado+tomato mix and serve.
Note to self: try grilling next time

Avocado!! I love it!! How do you choose it? I always end up with unripe avocado. =P

wm: Oh, I put them outside for a few days for them to be ripe first… just like bananas or mangoes but avocados take a few more days. When riped, they are soft to the touch and the skin is brownish-purplish, very easy to cut … go check out didally’s blog… she wrote an informative post about avocados recently
